
First up we have Margaret at Tea and Scones with a a delicious Mexican dinner -- stacked enchiladas made with homemade tortillas, complete with a traditional Mexican dessert, flan...

Next up, Rosa at Cooking with Rosie made some beautiful dessert empanadas, made with raspberry and homemade strawberry jam, don't they look amazing?

Christine at Kits Chow made two Mexican dishes; a snack of Chile-garlic Peanuts, that look spicy enough to liven up any party...

and also a refreshing Mexican jicama snack with shreds of jicama and lime.

And finishing off our culinary "trip" to Mexico, we have a new traveler, Kayte at Grandma's Kitchen Table! Welcome to the group, Kayte! She made a lovely Mexican lunch of Spicy Mexican Soup with Shrimp, Steak Quesadillas, Mexican Black Bean Salad and Mexican Corn Salad, doesn't it look delicious?

Time to announce our June destination, drum roll please ... India! MKMW traveler Margaret suggested we travel to India for June, what a fun summer destination, with plenty of flavor and spice. If you would like to travel with us, just post an Indian recipe or meal on your blog and leave a comment in this post with a link to your blog post and I will include your dish in the round-up. Please post your dish and comment by June 30th and stay tuned for our India round-up and July destination on July 1st.
