Welcome to our destination Mexico Round-up! We have a few more submissions than usual, how fun! Mexican cuisine is enjoyed by many and it seems like there is always something new to explore -- here are our dishes...
Over at Nummy Kitchen I've been making lots of new to me Mexican foods the past month and thought I would share these Roasted Vegetable Enchiladas with Tomatillo Sauce since it was my first time cooking with Mexican tomatillos, this dish was a bit time consuming but was delicious.
Finishing out our round-up are Carla and Michael with a delicious dish of Pork Tinga, what a versatile meal, thanks for sharing!
It was so nice to seem some new faces and some old friends at this round-up. Thanks to everyone for cooking along. Can you believe these amazing Mexican dishes we all prepared? Hope you all can join us for our May destination, Ethiopia! I will put a destination Ethiopia post up in a few days with a linky widget so have fun finding a new Ethiopian dish to try :) New member are always welcome to cook along!

About My Kitchen, My World...
My Kitchen, My World was started to document the journey of experiencing other cultures through food. On the 1st of each month, a country will be selected, and we adventurous types will have a month to find a recipe for a dinner that takes us there for a fraction of the plane fare! Ever wanted to make Paella? Gnocchi? Stir Fry or Jamaican Jerk? Well, here's your chance. Make a meal that takes you places.
Join the group - it is a big world out there! All you need is a blog to document your journey, the ability to post once a month, and a kitchen! Just jump right in by making a dish from the current country, posting about it on your blog, and checking-in here at MKMW by leaving a comment.
